Grain Free Granola Bars

paleo granola bars

For my recent trip I was looking for some travel friendly snacks, but didn’t want them to be full of gluten, so of course I decided to make my own. And here is what came out of it!

Ingredients:

  • 1 cup raw sunflower seeds
  • 1/2 cup raw pepitas (pumpkin seeds)
  • 1 cup raw walnuts
  • 1/2 cup raisins
  • 1/4 cup milled flax seeds
  • 2 tbsp chia seeds
  • 1 banana, mashed
  • 2 tsp cinnamon
  • 1 tsp cardamom
  • 1/2 cup sunflower seed butter
  • 10 pitted dates, soaked for 30 minutes in hot water and drained

Directions:

  1. Preheat oven to 325F and line your pan with parchment paper. Use a larger pan if you wants thinner bars
  2. In a food processor combine your nuts and seeds, chia seeds and dates. Process till nuts are roughly ground (not to flour, you still want to have nuts in small pieces)
  3. Transfer nuts and dates from food processor into a bowl
  4. Add raisins, flax seeds, banana, sunflower seed butter and spices
  5. Transfer the contents of the bowl onto your baking pan
  6. Bake for 30 minutes, then remove and cut into desired pieces
  7. Bake for another 15 minutes till the bars the way you like them – some like them more dry, others like them a bit more chewy
  8. Enjoy!
