Gluten Free Shortbread Cookies

Sorry for the close up of the cookie, I only realized to take a photo when there was just one left – oh oh… If you like shortbread cookies, these could work for you. They are nuttier of course due to almond flour, but are very yummy and buttery too thanks to ghee. Hope you like it!

Ingredients:

  • 5 tbsp ghee
  • 1 cup coconut palm sugar
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 1.5 cup walnut flour
  • 1/4 tsp salt

Directions:

  1. Preheat oven to 350F
  2. Mix all the dry ingredients in a large bowl
  3. Add ghee and vanilla extract and mix well by hand
  4. Arrange cookies on the baking sheet (I just took a spoonful and spread it out on the sheet, some people prefer to use cookie cutters, but I find it hard with gluten free dough and not butter, but ghee since butter would keep your dough solid, while ghee wouldn’t)
  5. Bake for 15 minutes or until starting to brown
  6. Enjoy!
