5 spice cookies

My issue with gluten free cookies has always been that they usually are wet and chewy. And I love chewy cookies, but some people (like my husband) prefers dry crispy cookies. So of course I had top go on a quest trying to make one. And here it is!

Ingredients:

  • 1 tbsp chia seeds
  • 3 tbsp water
  • 1 egg
  • 1 cup quinoa flour
  • 1 cup walnut flour
  • 1/4 tapioca flour
  • 1/ cup flaxseed meal
  • 1/3 cup coconut shortening
  • 1/2 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 1/2 tbsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp allspice

Directions:

  1. Preheat the oven to 350F
  2. Combine chia seeds with water in a small bowl and set aside
  3. Mix all the dry ingredients in the large mixing bowl
  4. In a smaller bowl beat the egg and add melted shortening
  5. Line a baking sheet with parchment paper
  6. You can roll the dough and use the forms to cut it into shapes. What I did is just place a teaspoon of dough on the sheet and flatten them out with a wet hand because I was not striving for perfect circles )))
  7. Bake for about 12-15 minutes till golden
  8. Enjoy!
